- 400 g Feta (9% fat)
- 3 tbsp Hazelnuts (à 15 g)
- 1 Carrot
- 0.5 Red Onion
- 1 tsp Olive oil
- Salt
- Pepper
- 600 g Cauliflower (1 small head)
- 1 bunch Parsley (à 20 g)
- 1 tsp lemon juice

Cut the feta into four pieces and place them in a baking dish. Roughly chop the hazelnuts. Peel, wash, and coarsely grate the carrot. Peel and chop the onion. Mix the nuts with the carrot, onion, and oil, and season with salt and pepper. Place the mixture on the cheese pieces and bake in a preheated oven at 200 °C (180 °C convection; Gas: Mark 3) for 10 minutes.

Meanwhile, clean, wash, quarter, and coarsely grate the cauliflower. Wash, dry, and chop the parsley. Mix the cauliflower with parsley and lemon juice, and season with salt and pepper. Serve the cauliflower rice with the baked feta.
