Baked Feta Pasta from Spoonsparrow: quick to make and simply brilliant!

Ingredients

  • 600 g Cherry Tomatoes
  • 1 Red Onion
  • 2 Garlic cloves
  • 200 g Feta Cheese
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • Pinch Dried Thyme
  • Pinch Dried Oregano
  • Pinch Chili Flakes
  • 400 g Whole Wheat Spaghetti
  • 2 Handfuls Basil

Instructions

    Wash and prepare the tomatoes, halving them if necessary. Peel the onion, halve it, and slice it thinly. Peel the garlic and slice it.

    Place the vegetables in a baking dish and set the feta in the center. Drizzle everything with olive oil, salt, pepper, and sprinkle with spices.

    Bake in a preheated oven at 200 °C (180 °C fan, Gas Mark 3) for 30–35 minutes.

    Meanwhile, cook the pasta al dente in boiling salted water according to package directions. Wash and dry the basil, and pluck the leaves.

    Drain the pasta. Remove the feta and vegetables from the oven, roughly crumble everything with a fork, and mix together. Add the pasta and 1 ½ handfuls of basil to the baking dish, mix well, and serve on 4 plates. Garnish with the remaining basil leaves.
