Baked Chicken with Tomatoes

Ingredients

  • 4 chicken breast fillets (≈140 g)
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp olive oil
  • 400 g cherry tomatoes
  • 2 Garlic cloves
  • 1 tsp Dried oregano
  • 1 tsp lemon juice
  • 150 g grated mozzarella
  • 2 tbsp chopped basil

Instructions

    Rinse the chicken breast fillets, pat dry and season with salt and pepper. In a hot pan, brown them all around in 1 tbsp oil until golden brown, then remove from the pan.

    Preheat the oven to 180°C (356°F) fan‑forced. Brush a baking dish with the remaining oil.

    Wash, trim and halve the tomatoes. Peel the garlic and slice thinly. Arrange the tomatoes in the dish. Sprinkle with oregano and season with salt, lemon juice and pepper. Place the chicken on top and scatter mozzarella over it. Lightly re‑season and bake for about 25 minutes until golden brown.

    Remove from the oven and serve garnished with basil.
