Ingredients

  • 1 carp (ready to cook, about 1.5 kg)
  • 2 red onions
  • 2 Garlic cloves
  • 5 tomatoes
  • 1 untreated lemon
  • 3 tbsp freshly chopped herbs (sage, rosemary, thyme, parsley)
  • Salt
  • pepper (ground)
  • 100 ml dry white wine
  • 4 tbsp olive oil

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Wash and pat dry the carp. Peel and finely dice the onions and garlic. Wash, quarter, seed, and dice the tomatoes. Zest the lemon, finely chop it, and squeeze out its juice. Mix the zest, juice, onions, garlic, tomatoes, and herbs together. Salt and pepper the inside and outside of the carp and fill it with half of the mixture. Place in a baking dish and spread the remaining herb-tomato mix over the fish. Pour the white wine and drizzle olive oil on top. Bake for 35-40 minutes, basting occasionally with the liquid.
