Baked Carp in Salt Crust

Ingredients
- 2 kg coarse salt
- 1 kg flour
- 7 egg whites
- 1 carp (ready to cook, gutted, about 2 kg)
- Salt
- pepper (ground)
- a handful parsley
- 1 untreated lemon

Mix the salt with the flour. Fold in the egg whites and gradually knead with enough water until a smooth dough forms. Chill for about 30 minutes.

Preheat the oven to 250°C (482°F) on top and bottom heat.

Wash and pat dry the carp inside and out. Season the interior with salt and pepper. Rinse the parsley, shake dry, and fill the cavity with sliced lemon and parsley.

Roll each half of the salt dough thinly, about 1 cm thick. Place the fish on one half and cover with the other. Put in a roasting pan and bake for about 15 minutes. Reduce heat to 200°C (392°F) and cook for an additional approximately 1.5 hours.

Break open the salt crust before serving and optionally accompany with a cream sauce.
