Baked Cannelloni with Ground Meat and Cheese

Ingredients
- 1 Garlic clove
- 400 g passata tomatoes
- Salt
- black pepper (freshly ground)
- a pinch of sugar
- 4 tbsp red wine
- 1 onion
- 400 g ground beef
- 1 egg
- 1 tsp medium-hot mustard
- 1 tsp dried thyme
- 8 cannelloni tubes
- 2 balls mozzarella cheese (125 g each)
- 75 g finely grated Parmesan

Preheat the oven to 180°C fan-forced.

Peel and finely chop the garlic, then mix it into the passata tomatoes. Add salt, pepper, sugar, and wine, stir well, and set aside. Peel and finely chop the onion. Combine the ground beef with the onions, egg, mustard, half of the passata tomatoes, and thyme; season generously with salt and pepper. Fill the cannelloni tubes with the meat mixture. Spread the remaining tomato sauce on the bottom of a baking dish. Arrange the filled cannelloni over the sauce. Dice the mozzarella into small cubes and scatter them on top. Sprinkle with Parmesan cheese and bake in the oven for about 40 minutes.
