Grapefruit-Avocado Salad
A grapefruit-avocado salad: flavors united in an incomparable dressing. This creation with grapefruit and avocado always receives a warm welcome.
Ingredients
- 1200 g grapefruit (4 grapefruits)
- 400 g ripe avocado (2 ripe avocados)
- 2 Spring Onions
- 2 tsp cardamom pods
- 0.5 lemon
- 3 tbsp olive oil
- 2 tbsp honey
- 1 pinch piment
- Salt
- Pepper
- 40 g watercress (1 handful)
Instructions

Slice grapefruits with a knife thick enough to remove the white membrane.

Remove grapefruit segments between the membranes, catching the dripped juice in a bowl.

Halve avocados and remove pits. Peel halves and cut flesh into ~1 cm wide strips.

Trim spring onions, wash, and slice diagonally into thin rings.

Crush whole cardamom pods or released seeds in a mortar. Squeeze half a lemon.

Whisk grapefruit juice, 2 tsp lemon juice, cardamom, oil, honey, and piment. Season dressing with salt and pepper.

Trim thick stems from watercress. Rinse, dry, and roughly chop.

Mix watercress with about one-third of the dressing. Arrange avocado strips, spring onions, grapefruit segments, and marinated watercress on plates. Drizzle remaining dressing over.
