Baked Asparagus with Shrimp

Ingredients
- 2 kg white asparagus
- Salt, sugar, freshly ground pepper
- 2 tbsp lemon juice
- 500 g pre‑cooked scampi shrimp
- 200 g butter
- 2 egg yolks (medium)
- 4-6 tbsp white wine
- 1 bunch dill

Thinly peel the asparagus with a vegetable peeler or special asparagus knife, starting just below the head and pulling down toward the stem tip. Trim off woody ends.

Rinse the scampi and pat dry. Heat 1 tablespoon of butter in a skillet and quickly sear the shrimp; season with salt and pepper.

Add the asparagus to boiling water seasoned with 2 pinchings of salt, sugar, and 1 tbsp lemon juice; cook for about 15 minutes until just tender.

Melt the remaining butter in a saucepan off‑heat. In a metal bowl whisk together egg yolks, wine, and the rest of the lemon juice. Place over a hot water bath and beat with a whisk until creamy. Gradually fold in the liquid butter while continuing to whisk. Season Hollandaise sauce with salt and pepper.

Remove asparagus from water, drain well, and place on a heat‑proof platter. Spread Hollandaise sauce over it and briefly broil to gratinate. Rinse dill, shake dry, strip into fronds, and roughly chop. Sprinkle dill over the asparagus. Plate asparagus with shrimp on top.
