Baked Asparagus Cannelloni

Baked asparagus cannelloni from Spoonsparrow are always delicious!

Ingredients

  • 1.5 kg white asparagus
  • 10 g sugar (1 tsp)
  • Salt
  • 2 tbsp lemon juice
  • 8 sheets green lasagna sheets
  • 5 g Butter (1 tsp)
  • 160 g turkey ham (8 slices)
  • Pepper
  • 50 g Parmesan cheese (1 piece)
  • 1 egg
  • 100 g Sour cream

Instructions

    Wash, peel and trim the woody ends of the asparagus. In a large pot, cook in boiling water with sugar, 1 tbsp salt, and lemon juice for about 15 minutes until almost tender.

    Meanwhile, cook lasagna sheets according to package instructions in boiling salted water until al dente, then drain and pat dry.

    Grease a baking dish with butter. Place one slice of ham on each noodle sheet, arrange asparagus on top, roll up, and place seam side down in the baking dish. Season with salt and pepper.

    Grate Parmesan cheese and separate the egg yolk from the white.

    Whisk together Parmesan, sour cream, and egg yolk. Beat the egg white until stiff peaks form, then fold into the mixture. Spread evenly over the rolls and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes until golden brown.
