Ingredients

  • 1 egg white (medium size)
  • 2 tbsp Lime juice
  • 50 g amaretti biscuits
  • 6 fresh apricots
  • 1 Tbsp pistachio nuts
  • a few lemon balm leaves

Instructions

    Beat the egg white and 1 tbsp lime juice until very stiff. Finely crumble the amaretti biscuits and fold them into the meringue with the remaining lime juice.

    Peel, halve, pit the apricots and place them cut side down in a baking dish. Spread the amaretti-egg white mixture over each half.

    Bake the apricots at 200 °C for about 5 minutes until golden‑yellow. Chop the pistachios. Arrange the baked apricots with pistachios on a plate and garnish with lemon balm leaves.
