Baked Apples with Vanilla Sauce for the Thermomix®
The baked apples on vanilla sauce for the Thermomix® from Spoonsparrow are always delicious!
Ingredients
- 60 g dried cherries (4 tbsp)
- 60 g dried cranberries (4 tbsp)
- 60 g sultanas (4 tbsp)
- 240 ml apple juice
- 1600 g tart apples (8 tart apples)
- 4 tbsp chopped almond kernels
- 2 Vanilla Beans
- 80 g cane sugar (4 tbsp)
- 600 g yogurt (0.3% fat)
- 8 tbsp egg liqueur
Instructions

Add dried cherries, cranberries and sultanas with 80 ml apple juice to the mixing bowl and soak.

Wash the apples and remove the cores with an apple corer.

Add chopped almonds to the fruit mixture and blend for 20 sec on reverse speed 3.

Fill the apples with the mixture using a spoon and place in a baking dish.

Pour the remaining apple juice over the apples. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 30–35 minutes.

Meanwhile, split the vanilla beans lengthwise, scrape out the seeds with a sharp knife and mix with sugar in the mixing bowl for 20 sec on speed 3.

Add yogurt and stir for 2 min on speed 4 until smooth. Add egg liqueur through the lid opening if desired. Serve on plates and place one baked apple on each.
