Chocolate Yogurt Mousse for the Thermomix®

Ingredients
- 6 sheets gelatin
- 150 g white couverture chocolate
- 600 g yogurt (0.3% fat)
- 6 egg whites
- 100 g cane sugar
- 6 oranges
- 2 pomegranates
- 80 ml orange liqueur (or orange syrup)
- Lemon balm (optional)
Instructions

Soak gelatin in cold water.

Add couverture to the mixing bowl. 5 s / level 8 and 4 min / 50°C / level 2 until melted.

Mix yogurt with the liquid chocolate for 40 s / level 4, pour back into the bowl, scrape thoroughly and dry out.

Separate eggs; whisk egg whites and sugar in the bowl with the butterfly attachment for 3–3.5 min / level 3.5 until stiff (reserve yolks). Pour back in.

Melt gelatin‑laden yogurt mixture: add 3 tbsp of yogurt to the bowl, 2 min / 50°C / level 2, then stir for 1 min / level 3 while adding yogurt gradually through the lid opening onto the running blade.

Fold folded egg whites gently for 10 s / level 2 into the yogurt blend.

Fill eight ramekins (150 ml each) with the mousse and chill for 2–3 hours. Scrape bowl clean.

Peel oranges hot, dry‑rub, then peel off all white pith; slice fruit flesh thinly.

Halve pomegranates, remove seeds with a spoon, combine seeds, orange slices and liqueur/syrup in the bowl, mix 10 s / counterclockwise / level 1.

Serve orange salad on plates. Briefly dip ramekins in hot water, trim edges with a sharp knife, then pour mousse onto plates. Garnish with lemon balm if desired.
