Baguette Buns with Avocado, Sheep Cheese, Olives and Bell Pepper

Ingredients

  • 1 loaf of white bread
  • 1 Avocado
  • 150 g Feta
  • 1 red bell pepper
  • 1 Red Onion
  • 1 yellow tomato
  • 100 g garlic butter
  • 50 g arugula
  • 40 g green olives
  • 2 tbsp olive oil
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp herbs (optional)

Instructions

    Slice the white bread lengthwise. Hollow out a bit of the loaf, spread with garlic butter, and toast briefly in the oven.

    Halve the avocado, remove the pit, peel, and cut into wedges. Wash the bell pepper, halve it, deseed, and dice. Peel the onion and finely dice it. Blanch the tomato for a few seconds, cool, peel, quarter, deseed, and chop into small pieces. Dice the feta as well. Rinse the arugula, remove stems, and cut smaller if desired. Cut olives into rings or cubes as preferred. Mix all ingredients, add olive oil, and season with salt and pepper.

    Fill the toasted bread with the mixture, cut into four portions, and tie for transport or garnish with a ribbon of fresh herbs.
