Baba with Apples

Ingredients
- 2 Apples
- 1 tbsp butter
- 100 ml cold whipping cream
- 2 Eggs
- 20 g sugar
- 90 g softened butter
- softened butter (for greasing the pan)

Dissolve yeast in 4 tbsp lukewarm water for the dough. Mix flour and salt in a bowl, create a well in the center, beat in the eggs, add sugar and yeast.

Knead into a smooth elastic dough, spread softened butter over it, cover and let rise in a warm place for 45 minutes. Fold in the remaining butter and fill the dough into a greased bundt pan. Let rise covered for another hour.

Meanwhile preheat the oven to 200°C (400°F) with upper and lower heat.

Bake the cake for about 40 minutes, checking with a toothpick. Carefully remove from the pan and cool on a wire rack.

For the syrup wash the oranges. Peel half an orange with a vegetable peeler, cut the zest into thin strips. Squeeze the juice of the oranges, combine with sugar and zest, bring to a boil, simmer for 5 minutes at low heat. Stir in rum if desired. Soak the cake in this syrup, set aside some zest for garnish.

Peel, halve, core and slice apples into thin wedges. Heat butter in a pan, brown apple slices on both sides for about 1–2 minutes. Arrange them as a bed on a plate, place the cake on top. Whip cream to stiff peaks and fill the center hole of the cake with it. Garnish with orange zest.
