Avocado-Smørrebrød with Egg from Spoonsparrow: Creamy avocado is topped with spicy cress and radishes. Delicious!

Ingredients

  • 1 egg
  • 2 Radishes
  • 1 slice Gouda
  • 0.5 Avocado
  • 1 tsp lemon juice
  • Salt
  • Pepper
  • 2 slices Rye wholemeal bread
  • Cress (for garnish)

Instructions

    Poach the egg, place it in boiling water and cook for about 6-7 minutes until runny. Drain the egg and cool it down in cold water.

    Meanwhile, wash, peel and slice the radishes. Cut out shapes from the cheese slice. Peel the egg and slice it.

    Halve the avocado, remove the pit, scoop out the flesh, slice it, drizzle with lemon juice. Mash the flesh finely with a fork and season with salt and pepper.

    Spread the bread with avocado and top with radishes, cheese and egg. Cut cress from the patch and serve the Smørrebrød sprinkled with cress.
