Ingredients
- 1 Red Onion
- 4 tomatoes
- 4 Basil stems
- 3 tbsp olive oil
- 1 tbsp Lemon Juice
- Salt
- Pepper
- 2 large ripe avocados
Instructions

Peel the onion and slice into rings. Wash the tomatoes and quarter them.

Wash the basil, shake off excess water, pluck leaves from three stems and cut into strips. Mix oil, lemon juice, salt, and pepper in a bowl.

Halve the avocados and scoop out the flesh with a spoon. Set aside the avocado shells.

Dice the avocado flesh and combine with tomatoes, onions, basil, and salad dressing in a large bowl. Toss briefly so the avocado pieces don’t become mushy.

Season further with salt, pepper, and lemon juice if desired. Fill the avocado shells with the salad and garnish with remaining basil leaves before serving.
