Ingredients
- 200 g young leaf spinach
- 1 Avocado
- 2 EL lemon juice
- 2 oranges
- 1 Red Onion
- 2 EL white wine vinegar
- 4 EL germ oil
- Salt
- Pepper (freshly ground)
Instructions

Wash, trim, and spin dry the spinach. Peel the avocado, halve it, remove the pit, and cut into 8 wedges. Drizzle immediately with lemon juice.

Grate 2 teaspoons of orange zest. Thoroughly peel the oranges with a sharp knife, removing the white pith. Then slice along the segments to extract the flaked fruit. Catch the released juice and squeeze any remaining pulp by hand.

Peel the onion and cut into rings.

Whisk vinegar with orange juice and zest, oil, salt, and pepper; taste and adjust. Toss spinach and onion rings with the dressing, divide onto bowls, and arrange orange flakes and avocado wedges on top. Serve fruity spinach salad.
