Ingredients

  • 2 large avocados
  • 1 cucumber
  • 1 stalk Celery
  • 1 handful cilantro
  • Juice of 1 lime
  • 2 tsp crushed cumin seeds
  • 1 tsp crushed coriander seeds
  • Salt
  • 1 tsp tamari (strong soy sauce)
  • 200 g cashews
  • 2 tbsp lemon juice
  • Salt
  • Chives

Instructions

    Halve the avocados, remove the pits and dice the flesh. Peel and cube the cucumber. Trim the celery stalks, removing any fibers if necessary, and slice into rounds. Pull the cilantro leaves from the stems and finely chop them.

    Blend all gazpacho ingredients with 500 ml water in a blender until smooth. If the soup is still too thick, blend in more water as needed.

    For the sour cream, blend all ingredients with 200 ml water in a blender until creamy. If the mixture is still too firm, gradually add more water. Spoon some sour cream over the soup and garnish with chopped chives before serving.
