Baked Tomatoes and Sheep Cheese

Tomatoes and sheep cheese baked in the oven by Spoonsparrow always comes back around again.

Ingredients

  • 800 g tomatoes (Roma)
  • 300 g sheep cheese
  • 4 sprigs fresh oregano
  • 6 sprigs fresh thyme
  • 2 shallots
  • 2 Garlic cloves
  • 5 tbsp olive oil
  • 2 tbsp Lime juice
  • Salt
  • freshly ground pepper

Instructions

    Wash the tomatoes, halve them, remove stem ends and slice into rounds. Slice the sheep cheese into rounds as well.

    For the dressing wash the herbs, shake dry, pluck leaves and finely chop. Peel the shallots and garlic, then mince them. Mix 4 tbsp oil, lime juice, herbs, shallots and garlic; season generously with salt and pepper.

    Brush a baking dish with the remaining oil. Layer the cheese and tomato slices fan‑shaped, drizzle with herb dressing. Bake in a preheated oven at 200 °C (180 °C fan‑forced; gas: level 3) for about 15 minutes until gratinated. Serve warm.
