Avocado and Goat Cheese Burger

Burger with avocado and goat cheese from Spoonsparrow: sun‑ripened cherry tomatoes give the delicious bite the final touch!

Ingredients

  • 1 slice toast bread
  • 2 tbsp Yogurt (3.5% fat)
  • 1 Garlic clove
  • 1 tsp sharp mustard
  • 1 pinch Organic lemon zest
  • 1 egg yolk
  • 50 g goat cheese
  • 400 g ground beef
  • breadcrumbs (as needed)
  • Sea salt
  • freshly ground pepper
  • 150 g cherry tomatoes
  • 2 tbsp olive oil
  • 3 tbsp vegetable oil
  • 4 ciabatta rolls
  • 2 handfuls arugula
  • 1 Red Onion
  • 1 Avocado
  • 4 tbsp Tahini

Instructions

    Remove the crust from the bread, break into pieces and mix with yogurt; let sit. Peel the garlic and press it into a bowl. Add mustard, lemon zest, egg yolk and toast; mash everything finely with a fork. Chop goat cheese and add to the mixture. Combine well, add breadcrumbs if needed, and season with salt and pepper. Shape 4 patties from the mixture and refrigerate.

    Preheat oven to 200°C (400°F) fan‑forced.

    Wash cherry tomatoes, drain thoroughly and place on a baking tray. Drizzle with olive oil, sprinkle with salt and bake for about 15 minutes until they soften slightly.

    Meanwhile, cook the burger patties in a hot pan with vegetable oil, browning each side slowly for 4–5 minutes.

    Slice the buns open or through. Wash, dry and tear arugula into smaller pieces if desired. Peel the onion and slice into rings. Peel the avocado, halve it, remove the pit and cut each half again.

    Spread tahini on the bun bottoms, sprinkle with arugula, add onion rings, place the patty on top, then finish with avocado slices and cherry tomatoes. Put the tops back on and serve the avocado and goat cheese burgers.

    Serve with fries if desired.
