Asparagus Tortilla

Ingredients

  • 250 g green asparagus
  • Salt
  • 5 shallots
  • 8 eggs
  • Pepper
  • 15 g Butter (1 tbsp)
  • 30 g grated mozzarella

Instructions

    Wash the asparagus, peel the lower third and trim off the woody ends. Cut the stalks into bite‑size pieces and boil in salted water for about 5 minutes. Then drain, shock with cold water and let drain.

    Meanwhile, peel the shallots and slice them thinly. Beat the eggs and season with salt and pepper.

    Heat butter in a large non‑stick pan and sauté the shallots over medium heat until translucent. Spread the shallots evenly in the pan and pour over the egg mixture. Distribute the asparagus in the pan and sprinkle everything with cheese. Cover and cook for about 5 minutes on medium heat, then serve immediately.
