Atlantic Cod with Bacon Strips, Mashed Potatoes and Cucumber Salad

Ingredients

  • 500 g waxy boiling potatoes
  • 1 Shallot
  • 150 g peas
  • 2 tbsp butter
  • 150 ml milk
  • Salt
  • nutmeg
  • 4 Atlantic cod fillets (about 150 g each)
  • Pepper (freshly ground)
  • 2 tbsp flour
  • 2 tbsp Vegetable oil
  • 100 g bacon strips
  • 2 tbsp butter
  • dill sprigs (for garnish)

Instructions

    Boil the potatoes with skins on for about 30 minutes.

  2. 2.

    Rinse the cod, pat dry and season with salt and pepper. Dredge in flour and fry in hot oil for about 5 minutes per side until golden brown. Fry the bacon slowly in butter until also golden brown.

    Peel and finely dice the shallot. Sauté with peas in 1 tbsp hot butter for 1–2 minutes.

    Squeeze the potatoes through a masher, stir in hot milk until creamy. Fold in peas and remaining butter, season with salt and nutmeg; add more milk if needed.

    Plate the fish with bacon and mashed potatoes. Garnish with dill sprigs.

    Serve cucumber salad on the side as desired.
