Ingredients

  • 100 g puff pastry
  • olive oil
  • 1 handful Arugula
  • 1 stalk basil
  • 1 Garlic clove
  • 8 large shrimp (pre‑shucked and deveined, leaving the tail segment)
  • Salt
  • Cayenne pepper
  • 1 grapefruit (organic)
  • 1 tsp Honey

Instructions

    Preheat the oven to 200°C fan.

    Cut the puff pastry into strips about 2×10 cm and place on a parchment‑lined tray. Brush with oil and bake for 5–10 minutes until crisp. Remove from oven and let cool.

    Wash, dry, and tear the arugula into smaller pieces. Finely chop the basil leaves. Peel and finely mince the garlic. Sauté the shrimp with the garlic and basil in 2 tbsp hot oil for 1–2 minutes. Season with salt and cayenne pepper. Remove from heat and let rest. Wash the grapefruit warm, zest it, then peel and cut into segments. Save the juice and squeeze out the remaining flesh. Mix the grapefruit juice, basil, 1–2 tbsp water, and honey. Fold in the shrimp and season with salt. Finally add the grapefruit segments, zest, and arugula, and serve arranged on the pastry strips.
