Atlantic Cod in Puff Pastry

Ingredients
- 10 thin Atlantic cod fillets
- 1 egg
- 100 ml whipping cream
- 2 tbsp fresh dill (chopped)
- Sea salt
- pepper (ground)
- 1 large zucchini
- 450 g puff pastry (frozen)
- juice of one lemon
- 2 tbsp milk

Let the puff pastry sheets thaw at room temperature side by side.

Rinse cod fillets cold and pat dry with paper towels. Separate egg yolk from white. Place 2 fillets and the egg white in a tall mixing bowl and puree finely with an immersion blender. Pour in the cream and stir until a smooth filling forms. Stir in dill and season the filling with salt and pepper.

Roll out puff pastry into a 20 x 26 cm sheet. Season cod fillets with salt and pepper and drizzle with lemon juice. Wash, trim zucchini and slice lengthwise into thin strips with a vegetable peeler. Lay four overlapping zucchini strips side by side, place one fillet on top, spread a quarter of the filling over it. Add a second fillet and wrap the zucchini strips around to form a packet. Prepare four packets this way.

Place the cod packets on the puff pastry sheet, fold the dough over them and press firmly. Cut fish outlines with a knife. Trim excess dough for decorative scales and eye motifs. Whisk egg yolk and milk together and brush the pastry fish with it. Bake in a preheated oven at 200°C for about 25 minutes.
