Asparagus with Potatoes and Ham

Ingredients

  • 600 g mostly firm, small potatoes
  • 1 kg white asparagus
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp Lemon Juice
  • 1 handful parsley
  • 80 g Butter
  • Salt
  • 150 g ham (e.g., Parma)

Instructions

    Wash and boil the potatoes. Peel the asparagus thoroughly and cut off woody ends. Bring a pot of water to a boil, add the sugar, salt, and lemon juice, then cook the asparagus for about 25 minutes.

    Meanwhile rinse the parsley, set aside 4 stalks for garnish, finely chop the rest. Peel the potatoes and melt butter in a pan. Add 2-3 tbsp of asparagus cooking liquid to the butter and season with salt. Toss the potatoes in the butter. Drain the asparagus, arrange on plates, distribute the potatoes, drizzle remaining butter over the asparagus. Arrange ham slices on top. Sprinkle parsley over the potatoes and garnish with a parsley sprig.
