Pasta with Salsiccia and Tomatoes

Ingredients
- 500 g Garganelli (alternatively Rigatoni)
- Salad
- 300 g Salsiccia (alternatively coarse fresh pork sausage)
- 1 clove garlic
- 1 onion
- 250 g cocktail tomatoes
- 2 tbsp olive oil
- 100 ml White wine
- freshly ground black pepper
- 1 bundle arugula
Instructions

Cook the pasta according to package instructions in boiling salted water until al dente.

Press the salsiccia mixture out of the casings and break into smaller pieces. Peel and finely dice the garlic and onion. Wash and halve or quarter the tomatoes.

Heat olive oil in a pan, brown the sausage pieces all around. Add garlic and onion and sauté until translucent. Deglaze with white wine and let reduce slightly.

Add the tomatoes to the pan and simmer for about 5 minutes. Season with salt and pepper.

Rinse the arugula, shake dry, and tear into smaller pieces. Just before serving, fold it into the pasta and allow it to wilt slightly.
