  • 1 kg green asparagus
  • 1 Organic lemon
  • 60 g Butter
  • 4 tbsp elderflower blossoms (picked)
  • 400 g yogurt (3.5% fat)
  • 2 tbsp elderberry syrup
  • 4 tbsp Lemon juice
  • Salt
  • white pepper
  • elderflower blossoms (for garnish)

Instructions

    Wash the asparagus and trim the woody ends. Rinse the lemon under hot water, slice it, set aside the middle slices for garnish. Heat the outer lemon slices with water, 10 g butter and salt in a large pot. Steam the asparagus for about 10–15 minutes. Meanwhile, slowly heat the remaining butter until foaming, skim off the foam and let it cool slightly.

    Add the elderflower blossoms to the butter. Mix the yogurt with lemon juice and elderberry syrup and pour over four plates. Drain the asparagus and place on the yogurt, spoon the elderflower butter gently over the asparagus. Serve garnished with elderflower blossoms.
