Asparagus-Lemon Pasta with Feta
Pure spring delight: Our asparagus-lemon pasta with feta!
Ingredients
- 200 g whole wheat spaghetti
- Salt
- 3 tbsp Lemon juice
- 1 tsp lemon zest
- 3 tbsp olive oil
- 100 g feta (plus extra to taste)
- Pepper
- 150 g green asparagus
- 2 cloves garlic
Instructions

Cook whole wheat spaghetti according to package directions in boiling salted water until al dente. Drain.

Meanwhile, whisk together lemon juice, lemon zest and 2 tbsp of oil in a bowl. Crumble the sheep's cheese, add it and mix vigorously. Season with pepper.

Wash the asparagus, pat dry and trim the woody ends. Cut the asparagus into pieces about 2 cm long. Peel and chop the garlic.

Heat the remaining oil in a pan and sauté the garlic for 1-2 minutes over medium heat. Add the asparagus pieces and fry for 2-3 minutes.

Add the spaghetti and lemon oil sheep's cheese mixture to the pan and heat gently for 2-3 minutes. Season with salt and pepper.

Serve the asparagus-lemon pasta on 2 plates and season with lemon juice, salt and pepper. Sprinkle with extra feta to taste.
