Asparagus Ham Rolls

Ingredients

  • olive oil
  • 500 g Green Asparagus
  • Salt
  • Pepper (freshly ground)
  • 200 g mozzarella
  • 8 slices raw ham (e.g., Black Forest or Parma ham)
  • 100 ml Vegetable broth
  • 2 tbsp crème fraîche

Instructions

    Preheat the oven to 180°C (356°F) with both top and bottom heating. Lightly oil a baking dish.

    Peel the lower third of each asparagus spear and cut them in half lengthwise. Season with salt and pepper, then bundle into four groups. Slice mozzarella into strips and place on top of each asparagus bundle. Wrap each bundle with a slice of ham and secure with toothpicks. Arrange the bundles in the baking dish and brush lightly with oil. Whisk together the vegetable broth and crème fraîche until smooth, then pour over the rolls. Bake for about 20 minutes, turning the rolls occasionally and adding more broth if needed.
