Asian-Style Green Asparagus

Ingredients

  • 250 g Basmati rice
  • 1 kg green asparagus
  • 2 red chili peppers
  • 4 Spring Onions
  • 200 g shiitake mushrooms
  • 2 Garlic cloves
  • 4 tbsp sesame oil
  • 1 tsp freshly grated ginger
  • 2 tbsp rice wine
  • 3 tbsp Soy sauce
  • Salt
  • lime juice

Instructions

    Cook the rice according to package instructions or steam it. Peel the lower third of the asparagus. Wash, trim and slice the chili peppers into rings. Wash, trim and cut the spring onions into 1-2 cm pieces. Clean the mushrooms and halve them or slice them. Peel and finely chop the garlic.

    Brown the mushrooms in 2 tbsp hot oil in a pan or wok for 1-2 minutes, then set aside. In the remaining oil quickly sauté the garlic, spring onions, chili and ginger, then add the asparagus. Add rice wine, a splash of water and soy sauce, and simmer gently for 8-10 minutes. Return the mushrooms, season with salt and lime juice, and serve over the rice.
