Ingredients

  • 400 g spaghetti
  • 2 Spring Onions
  • 1 tbsp Olive Oil
  • 400 g diced tomatoes (canned)
  • Salt
  • Pepper
  • 400 g asparagus

Instructions

    Clean, wash and finely chop the spring onions. Heat the olive oil in a pot and sauté the onions until translucent, then add the tomatoes and season with salt and pepper. Let it simmer gently for a few minutes.

    Trim the lower ends of the asparagus and cut the stalks at an angle into 3 cm pieces. Bring plenty of salted water to a boil and cook the asparagus for 8 minutes; remove with a slotted spoon, rinse briefly under cold water, and drain well in a colander.

    Cook the spaghetti in the asparagus water until al dente. Add the asparagus to the tomato sauce, stir, and let it warm over low heat for a moment. Drain the spaghetti in a sieve, allow it to dry slightly, mix with the sauce, and serve on plates.
