Ingredients

  • 1 small onion (60 g)
  • 1 Garlic clove
  • 1 carrot (100 g)
  • 100 g broccoli
  • 0.5 stalk leek (125 g)
  • 100 g mie noodles
  • 50 g red lentils
  • 1 tbsp peanut butter (15 g)
  • 200 ml coconut milk
  • 1 tsp curry powder
  • a pinch chili flakes
  • Salt
  • Pepper
  • 1 handful coriander or flat‑leaf parsley (5 g)

Instructions

    Peel and finely chop the onion and garlic. Peel and slice the carrot into thin rounds. Clean and wash the broccoli and leek. Cut the broccoli into small florets and slice the leek into rings.

    Add all ingredients except the coriander to a large pan or pot with 200 ml water. Bring to a boil, stir well, then simmer over medium heat for about 13–15 minutes, stirring occasionally.

    Wash, dry, and shake off excess moisture from the coriander or parsley, then tear the leaves. Season the dish to taste with salt and pepper, sprinkle with chili flakes and fresh herbs, and serve warm.
