Asian Beef Noodles

Ingredients
- 400 g beef fillet (4 pieces of about 100 g)
- 400 g Asian egg noodle (Hokkien)
- 300 g pak choi (or spinach as substitute)
- 2 red chili peppers
- 2 tsp finely chopped coriander leaves
- Salt
- sesame oil
- 2 garlic cloves (finely chopped)
- 1 piece ginger (3 cm, grated)
- 2 tbsp Light soy sauce
- 2 tbsp sake

Wash the chilies, cut them lengthwise in half, remove seeds and slice into thin strips. Wash and trim the pak choi, blanch in plenty of salted water for about 5 minutes. Drain well. Cook egg noodles according to package instructions and drain.

Sear the steaks in a non-stick pan with 1 tbsp oil on both sides for about 3 minutes. Wrap the meat in foil and keep warm. Reduce heat and deglaze the pan with 2 tbsp sake and 2 tbsp water. Add soy sauce, ginger and garlic and simmer for about 1 minute. Season with salt. Slice the meat into very thin strips. Add the juices released while slicing to the pan. Toss noodles, beef and pak choi in the pan and mix well. Stir in coriander and chili. Let it rest briefly, adjust seasoning with a little more salt and serve immediately.

Optionally, you can also cook the steaks in a grill pan without oil. Then heat sake and water together with soy sauce, ginger and garlic, simmer for about 1 minute, and add the juices released while slicing the meat along with 1 tbsp sesame oil.
