Ingredients
- 250 g fragrant rice (e.g., basmati)
- 3 tbsp oil
- 2 shallots (thinly sliced)
- 4 cm ginger (thinly sliced)
- 2 cloves garlic (finely chopped)
- 250 g small shrimp (prepped for cooking)
- 2 tbsp Soy sauce
- 1 tbsp Raw Sugar
- 200 g bean sprouts
- 4 spring onions (thin rings)
- 2 tbsp coriander leaves (chopped)
- 2 red chilies (finely chopped)
- sweet chili sauce

Wash rice in a sieve under running water. Bring to boil in a pot with double the amount of water. Cover and simmer over low heat for 15 minutes. Remove from heat, let sit covered for 15 minutes, then cool well.

Heat oil in a wok. Stir-fry shallots, ginger, and garlic for 2-3 minutes until fragrant. Rinse shrimp, pat dry, add to the pan and cook for 2 minutes.

Add cooked rice, soy sauce, and raw sugar; stir-fry everything together for another 4-5 minutes.

If desired, rinse bean sprouts in a sieve with boiling water, then fold into the rice along with spring onions, coriander, and chilies. Serve the Asia Wok with Shrimp topped with sweet chili sauce.
