- 1 kg potatoes (starchy, boiling type)
- 2 Eggs
- 150 g flour (as needed)
- Salt
- nutmeg
- Pepper (freshly ground)
- 120 g well-dressed bacon (finely diced)
- 3 tbsp breadcrumbs
- parsley (for serving)

Wash potatoes and cook with skins in salted water for about 25 minutes. Drain, let steam slightly, then peel and press through a potato masher.

Add two-thirds of the flour, eggs, salt, and nutmeg to the mashed potatoes and knead into a loose, well-formed dough. Incorporate more flour if necessary.

Shape portions of dough into dumplings with floured hands. Flatten slightly, place a mixture of bacon and breadcrumbs in the center, and seal the dough over it.

Drop the dumplings into boiling salted water and simmer uncovered on low heat for about 20 minutes until cooked through.
