Ingredients

  • 1 bundle arugula
  • 2 Spring Onions
  • 4 stalks young celery
  • 0.5 romaine lettuce
  • radicchio
  • 8 cooked shrimp
  • 1 chili pepper
  • 2 tbsp white wine vinegar
  • 5 tbsp olive oil
  • pepper (ground)
  • sage flower for garnish

Instructions

    Wash salads, shake dry and cut into bite-sized pieces.

    Rinse shrimp cold and pat dry.

    Trim spring onions, wash, halve crosswise then split or quarter lengthwise.

    Clean celery, wash, use only the tips with leaves.

  5. 5.

    Slice chili pepper lengthwise, deseed and dice finely.

    Whisk vinegar, oil, chili, salt and pepper; combine with salad ingredients and shrimp, plate on bowls.

    Serve garnished with sage flowers.
