Artichoke Smoothie

We love smoothies! Try the hearty Spoonsparrow recipe for an artichoke smoothie: not only tasty but also healthy.

Ingredients

  • 1 cucumber
  • 1 stalk of celery
  • 2 artichoke hearts (canned)
  • 1 tsp pickled green peppercorns
  • 2 limes (juice)
  • 8 tbsp crushed ice
  • Tabasco
  • Salt
  • watercress (for garnish)
  • lime slice (for garnish)

Instructions

    Peel the cucumber, cut it lengthwise in half, scoop out the seeds with a spoon and roughly chop the flesh.

    Wash, trim, and cut the celery into pieces, setting aside some tender leaves. Roughly chop the artichoke hearts as well.

    Add cucumber, celery, artichokes, peppercorns, lime juice, and crushed ice to a blender and blend thoroughly. If needed, add a splash of cold water.

    Season the artichoke smoothie with Tabasco and salt for a savory finish. Pour into a glass, place a few watercress leaves in the center, and arrange lime slices with celery leaves around the rim.
