Apricots Relish

Apricots relish by Spoonsparrow: The seasoning sauce impresses with a sweet‑sour taste – great with meat, fish or grilled vegetables!
Ingredients
- 1 onion
- 1 piece ginger (10 g)
- 200 g soft apricots
- 125 g small strawberries
- 1 chili pepper
- 2 tbsp Rapeseed oil
- 2 tsp Curry powder
- 1 tbsp whole cane sugar
- 1 tbsp mustard seeds
- 6 tbsp white wine vinegar
- Salt

Peel the onion, halve it and cut into coarse cubes. Peel the ginger and finely chop it. Dice the apricots into small cubes. Wash and clean the strawberries. Slice the chili pepper lengthwise, remove the seeds, wash and chop.

Sauté the onion in hot oil for 2–3 minutes over medium heat. Add the apricots, chopped chili, curry powder, sugar and mustard seeds; sauté briefly. Pour in vinegar and 150 ml water, bring to a boil, then cover and simmer on low heat for 30–35 minutes, stirring occasionally.

Just before the end of cooking, add the strawberries to the relish and season with salt.
