- 8 small turkey cutlets
- 2 tsp medium‑hot mustard
- 8 slices Serrano ham
- 8 dried apricots
- 1 tbsp Olive Oil
- Salt
- pepper (ground)

Wash the turkey cutlets, pat dry with kitchen paper, gently pound flat and season with salt and pepper. Spread mustard on one side and top each with a slice of ham and an apricot.

Roll up the cutlets, secure with roulade pins and brush with olive oil. Grill the turkey roulades over medium heat for about 10 minutes, turning occasionally.
