Bacon-Wrapped Pork Chops with Potatoes

Ingredients
- 4 pork chops (preferably skinless)
- 4 large thin slices of Serrano ham (or pancetta)
- 8 small potatoes (from the day before)
- 2 tbsp flour
- 200 ml white wine
- 4 tbsp clarified butter
- Salt
- Pepper

If available, remove the rind from each chop with a sharp knife.

Wrap each chop with a slice of ham or pancetta.

Coat in flour.

Sear all sides over high heat.

Continue cooking 2–3 minutes, occasionally spooning fat over the chops.

Remove from pan and keep warm in a preheated oven at 80 °C.

Cut potatoes into pieces, dust with remaining flour (except 1 tsp), and fry them in the same fat until crispy on medium heat.

Place the pork chops back in the oven to stay warm. Deglaze the pan with wine, bring to boil. Whisk the remaining flour with 1 tbsp cold water, stir into the simmering wine sauce and bring to a second boil.

Plate potatoes, pork chops, and sauce together and serve.
