Apple Strudel with Powdered Sugar

Ingredients
- 250 g flour
- 1 pinch salt
- 1 egg yolk
- 1 tbsp germ oil
- 125 ml lukewarm water
- 1.5 kg Boskop apples
- 3 tbsp Lemon juice
- 75 g raisins
- 50 g chopped almonds
- 125 g liquid butter
- 2 packets vanilla sugar
- 2 tbsp breadcrumbs
- 1 tsp ground cinnamon
- powdered sugar (for dusting)

Gather the flour on a work surface, create a well in the center and add salt, egg yolk and oil. Mix with some water from the middle to knead.

Knead until smooth and slightly glossy.

Shape into a ball, brush with oil, place on a plate and cover with a preheated bowl; let rest for about 30 minutes.

Meanwhile: peel, quarter, core and slice apples thinly, immediately mix with lemon juice and fold in raisins and almonds.

Roll the strudel dough thinly on a lightly floured large kitchen towel, then use your palm to stretch it very thin, cutting off thicker edge pieces.

Spread half of the liquid butter over the dough and sprinkle with vanilla sugar, breadcrumbs and cinnamon. Distribute the apple mixture on top.

Roll the strudel using the towel.

Slide the rolled strudel onto a greased baking sheet—seam side down—and brush the surface with a little butter.

Bake in a preheated oven at 200°C for about 40–50 minutes, brushing with remaining liquid butter occasionally.

Remove and let the apple strudel cool slightly before serving dusted with powdered sugar.
