Coconut Squares with Berries

Ingredients
- 150 g soft butter
- 80 g sugar
- 1 pinch salt
- 50 g white couverture chocolate (melted)
- 4 eggs
- 300 g flour
- 2 tsp Baking powder
- 0.5 tsp grated lemon zest
- 100 g coconut flakes
- 8 sheets of white gelatin
- 500 g Low-fat quark
- 200 ml coconut milk
- 100 g coconut flakes
- 2 packets vanilla sugar
- 50 g sugar
- 2 tbsp lemon juice
- 150 ml whipping cream
- 100 g berry jam

Preheat the oven to 180°C (350°F) with upper and lower heat.

Cream the butter with sugar and salt. Stir in the melted couverture chocolate and eggs, then add flour, baking powder, lemon zest, and coconut flakes. Spread the dough onto a small baking tray lined with parchment paper and bake in the preheated oven on the middle rack for about 35 minutes (do the toothpick test!). Remove and let cool.

For the cream, soak gelatin in cold water. Mix quark with coconut milk and coconut flakes. Season with vanilla sugar, sugar, and lemon juice. Add the slightly wet gelatin to a small pot and dissolve it (do not boil). Stir in 2 tbsp coconut cream and fold into the mixture. Whip the cream stiffly and fold it in.

Spread the coconut cream over the cake and refrigerate for at least 3 hours until firm.

Warm the jam gently while stirring, then spread it over the coconut cake and let dry. Remove the cake from the pan and serve cut into pieces.
