Ingredients
- 1 lemon
- 1 green apple
- 30 g peanuts (2 tbsp)
- 45 g peanut butter without added sugar (3 tbsp)
- 15 g coconut chips (2 tbsp)

Cut the lemon in half and squeeze the juice into a shaker with 250 ml water. Wash the apple, remove the core with an apple corer, slice the apple into 8 thick slices and soak them in the lemon water for about 5 minutes.

Meanwhile, roughly chop the peanuts and stir them into the peanut butter. Pat the apple slices dry with a kitchen towel and spread peanut butter on half of them.

Place one more apple slice on top of each and sprinkle the edges of the sandwiches with coconut flakes. Secure with toothpicks if desired and serve.
