Ingredients

  • 375 g flour
  • 80 g sugar
  • 1 packet dry yeast
  • 100 ml milk
  • 1 packet vanilla sugar
  • 1 tsp salt
  • 4 drops bitter almond aroma
  • 2 tsp cardamom
  • 2 tsp Cloves
  • 2 tsp nutmeg flower
  • 3 egg yolks
  • 100 g butter
  • 25 g pork lard
  • 200 g raisins
  • 50 ml rum
  • 1 tbsp rose water
  • 700 g apples
  • 60 g sugar
  • 1 Tbsp vanilla sugar
  • 20 g butter
  • 150 g almonds
  • 150 g butter
  • powdered sugar

Instructions

    Mix all dough ingredients in a bowl and knead with the paddle attachment of a hand mixer on low speed. Then knead for about 5 minutes on high speed until smooth. Let rest in a warm place until doubled.

    Wash and drain raisins. Mix with rose water and rum, cover and set aside. Peel, quarter, core, and chop apples. Cook with sugar, vanilla sugar in hot butter while stirring for about 5 minutes. Add almonds and raisins, cook briefly, then cool.

    Preheat oven to 175°C.

    Knead dough again by hand and roll on a floured surface into a rectangle (about 30x40 cm). Spread apple mixture so that short sides have about 10 cm free and long sides about 2 cm. Fold thin dough edges over the filling. Roll from the shorter side and place on parchment-lined tray. Bake in oven on middle rack for 50-60 minutes.

    Let butter melt just before baking ends. Remove stollen, brush with half the butter, dust with half the powdered sugar, let cool slightly, then repeat.
