Ingredients

  • 250 g dried apricots
  • 1 lemon juice
  • 150 g soft butter
  • 200 g sugar
  • 2 Eggs
  • 500 g Low-fat quark
  • 150 g chopped almonds
  • 500 g flour
  • 1 packet baking powder
  • 250 g powdered sugar
  • 3 tbsp Lemon juice

Instructions

    Finely dice 200 g of apricots and soak them in lemon juice for about 30 minutes.

    Beat butter with sugar and eggs until fluffy, then fold in quark. Mix in almonds and apricots. Combine flour and baking powder, then knead into the quark mixture.

    Roll the dough flat on a floured surface with a rolling pin, cut it in half, shape into a stollen form, place on a greased baking sheet, and bake at 180°C for about 50 minutes. Remove and cool on a wire rack.

    For the glaze, whisk powdered sugar with remaining lemon juice until thick, then coat the stollen generously. Slice the remaining apricots into thin strips, press them into the glaze immediately, and let dry.
