Apple Quark Casserole
Apfel-Quark-Auflauf mit Zimt: Das fettarme, eiweißreiche süße Dessert oder kleine Hauptgericht ist sehr gut bekömmlich. Süßes für Vernünftige.
Ingredients
- 600 g Apples (3 medium)
- 125 g Brown sugar
- 1 tsp cinnamon
- 50 ml Apple Juice
- 1 Bio Lemon
- 50 g Butter (room temperature)
- 4 eggs
- 500 g Low-fat quark
- 75 g Semolina
- 1 tsp Baking powder
Instructions

Peel, quarter, core, and dice the apples.

Bring 25 g of sugar, cinnamon, and apple juice to a boil in a pot and simmer the apples covered over medium heat for 10 minutes until softened.

Zest 1 tsp of lemon zest from the lemon. Cream the soft butter, 50 g of sugar, and lemon zest with a hand mixer for about 5 minutes until very creamy.

Separate the eggs. Gradually mix in the yolks.

Mix in the low-fat quark, semolina, and baking powder.

Whip the egg whites in a second bowl until frothy, gradually whisk in the remaining sugar until stiff peaks form, and fold into the quark mixture.

Grease the baking dish if necessary. Place the apples in the dish or distribute them on 6 oven-safe glasses or cups and pour the quark mixture over them.

Bake the apple quark casserole in a preheated oven at 180 °C (160 °C convection, Gas: Level 2-3) on the middle rack for 30-35 minutes.
