Apple Pearls with South Tyrol Bacon

Ingredients

  • 6 sheets white gelatin
  • 400 ml Gewürztraminer wine
  • 2 apples (Golden Delicious)
  • 1 tbsp Lemon Juice
  • 1 tsp sugar
  • 125 ml apple juice
  • 12 slices South Tyrolean bacon
  • 4 slices mixed bread

Instructions

    Soak gelatin in cold water for 5 minutes. Warm a little Gewürztraminer, squeeze out the gelatin and dissolve it in the wine. Stir in the remaining Gewürztraminer and refrigerate to set for about 4 hours.

    Quarter the apples, core them, and cut small balls with a Paris fork cutter. Heat apple balls briefly in a pan with lemon juice, sugar, and apple juice. Drain on a sieve.

    Slice bacon into thin strips and crisp them in a hot pan. Let drain briefly on paper towels.

    Press the Gewürztraminer jelly through a potato ricer. Place apple pearls in glasses, arrange bacon strips over them, then pour the gelatin over everything. Cover each glass with a slice of bread and a piece of bacon.
