Apple Goat Cheese Tart
The apple-goat cheese tart from Spoonsparrow combines fruity and savory flavors in a delightful way.
Ingredients
- 2 small apples
- 1 tbsp Lemon Juice
- 5 g Butter (1 tsp)
- 80 g Arugula (1 bunch)
- 150 g puff pastry (refrigerated)
- 3 eggs
- 250 ml milk (3.5% fat)
- Salt
- Pepper
- nutmeg
- 50 g goat soft cheese (45% fat in curd)

Wash apples, quarter, core and cut into large cubes. Drizzle with lemon juice. Melt butter in a pan and sauté apples over medium heat until golden brown, stirring frequently. Remove from heat and let cool. Wash arugula and dry by spinning.

Line a 22 cm springform pan with parchment paper. Roll out puff pastry and line the pan, forming an edge. Distribute apples and half of the arugula in the pan.

Whisk eggs with milk and season heavily with salt, pepper, and freshly grated nutmeg. Pour egg mixture into the pan. Slice cheese and arrange on top of the tart. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 25 minutes until golden brown. Sprinkle remaining arugula and serve warm or cold as desired.
