Ingredients

  • 40 g soft butter
  • 60 ml lukewarm milk
  • 0.5 cube fresh yeast (≈20 g)
  • 200 g Flour
  • 1 pinch salt
  • 1 packet vanilla sugar
  • 1 egg
  • 1 tsp grated lemon zest
  • 200 g apricot jam
  • juice of one lemon
  • 750 g sweet‑sour apples
  • 100 g flour
  • 50 g coconut flakes
  • 150 g cold butter
  • 75 g sugar

Instructions

    Whisk the yeast into the milk until smooth and dissolve. Mix the flour with salt, vanilla sugar, egg and lemon zest. Add the yeast mixture and knead with an electric hand mixer’s dough hooks until a smooth dough forms. Cover and let rise in a warm place for about 45 minutes, or until doubled in volume. Then knead again on a floured surface and allow to rise once more.

    Peel the apples and use a cutter to remove the cores. Slice the apples into rings and drizzle with lemon juice.

    For the crumb topping, combine flour, coconut flakes, butter (cut into small pieces) and sugar. Work the mixture between your hands until it resembles coarse crumbs. Cover and refrigerate the crumb in the fridge.

    Take 2 plum‑size portions of dough and roll them into ropes about 1 m long. Twist both strands together to form a cord. Roll out the remaining dough and line a greased pan with it, poking several holes with a fork. Place the dough cord along the outer edge of the cake.

    Spread half of the apricot jam over the base. Arrange half of the apple rings on top, then cover with the remaining jam and apple rings. Sprinkle the crumb topping over everything. Bake in a preheated oven at 180 °C for about 35 minutes until golden brown.
