Vegan Covered Apple Cake
The vegan covered apple cake from Spoonsparrow tastes best fresh out of the oven!
Ingredients
- 260 g spelt flour type 1050
- 0.5 tsp Salt
- 100 g whole grain sugar
- 100 g plant margarine
- 125 ml oat milk
- 1 kg tart apples
- 2 tbsp lemon juice
- 0.5 tsp cinnamon

Mix 250 g flour with salt and 80 g sugar. Dice the cold margarine and add it, kneading into the flour. Then add enough oat milk until the dough is smooth but not sticky. Divide dough into two parts and roll each out. Grease a pie tin with remaining margarine and line with one half of the dough.

Wash, peel, halve, core, and cut apples into eighths. Toss apple pieces with lemon juice, remaining sugar, and cinnamon, then spread over the dough. Place the second rolled dough layer on top of the apples. Press the edges together firmly and bake in a preheated oven at 180 °C (160 °C fan or gas level 2–3) for about 40 minutes until golden brown. Remove from oven and serve warm.
